That's the thing that's always confused me with judging on cooking shows. Everyone has at least one thing that they don't like the taste of. It must be difficult to judge if something is bad because of the ingredient you don't like or because of the dish as a whole. You might either underscore it because of the ingredient or overscore it because you try to 'make up' for your personal pickiness.

It's probably just better to avoid the onions all together. He made it clear he didn't like them, and he still used them. If he was lactose intolerant he wouldn't cover it in cheese. He can't judge well while projectile shitting.

The chef (contestant) is crazy. Dude specifically says "I don't want raw onions" and he gives them to him anyway with the excuse "I thought they added to the freshness?" Come on, man. Is that what you are going to do in your restaurant? A customer orders something without whatever and you stick it in there anyway because you thought it tasted better? A chef that doesn't understand his customers is a chef without a job.

What's the technicality? Yeah judging is subjective and all so tastes will come into play but I think cooking is an art and this guy went with his gut and stayed true to his own art form.

Let's make a really stupid hypothetical situation.

You have a test in literature, you know what the teacher thinks about the book the test is about but you have a different opinion, will you do it according the their opinion and risk them saying you're wrong and didn't understand the story or go along with their opinion so you can get the better grade?

Of course your opinion may be valid and maybe even more people and / or other teachers agree with you but why risk it for petty nonsense, even if you know you're writing garbage.

If you wanna pass a reality show you gotta appeal to the judges, it doesn't matter that your dish is objectively better than the other dish but they'll like the other dish more, after you win you can make the better dish for people that want it.

I mean it really depends on what your values are. One time I cheated on a final in high school and got away with it (grades submitted same day) but I felt so bad I admitted it the next day. Thankfully he didn't tell the school and only took off a letter grade but I could imagine a lot of people calling that stupid and while I won't deny that, I stand by what I did.

If your thing is just to win then yeah that makes sense. If your thing is do right by yourself then you're going to do things differently than the "right way".

They aren't there to enjoy food. They are there to judge the food based on quality, taste, execution, skill, and more. Sure you may not like it, but if you can't get past that and objectively look at the food for what it is, you shouldn't be judging.

In this case, despite hating raw onion, was it fitting for the meal? Did it add to the meal? Would the meal have been better or the same without? If you can't answer those questions objectively, you aren't for judging.

What if an Olympic gymnast judge said "well I would have given you a better score, but I just don't like spins and flips in routines." They would be laughed away for not being objective. Were the flips and spins executed perfectly? What flaws were there, if any? Could they be improved? If you can't find a reason they should not have been there, you can't remove points.

I mean you could go further and more extreme with anecdotes, but the point remains. Judges look at what is in question objectively. Not like a customer.

Objectively, if you hate the flavor of an item, then it never would add to it for you. Food palettes are completely and utterly subjective, there's no objectivity to be had in taste. For example, mushrooms make me feel ill. They taste like dirt, have the texture of pure animal fat, and smell awful. There is zero context where I find them even palatable, much less could enjoy them. If a dish were served to me with mushrooms, I can't say it fit the meal, added to it, and I know objectively the meal was worse to me for having them. Since I can't eat them without such a horribly averse reaction, how the hell would I "objectively" determine whether or not the mushrooms were even good in the context of the foods they were cooked with?

I totally agree with you, both about taste being subjective and about mushrooms tasting awful - to me the chewiness is what I imagine eating styrofoam would be like and the taste ranges from "why do people even bother, it literally has no flavor" to "goddamn, who rubbed their unwashed taint on my dinner,".

That being said, most people like mushrooms (and onions) and maybe those of us that despise certain popular foods shouldn't be judges on cooking shows?

If only it was lactose intolerance - its an actually allergy. like... swelling and rashes and itchiness. I can eat all the milk and ice cream i want though - so - ice cream! Also, the older the cheese the worse the reaction, so i can usually have a piece of pizza and only suffer a slightly itchy nose. Parmasean is off the table, and you should see what happened after I ate some cheeseits thinking there wasnt actually real cheese on them. (My lips swelled up worse than kylie jenner's bottle fad thing)

It comes across as picky but I have what I can only describe as an anxious appetite. I'm not usually hungry when I should be (no appetite, nothing looks good at all). When I'm with people it makes it harder to pretend to have an appetite, especially for unfamiliar or disliked foods and the idea of eating makes me nauseas. Going out to new restaurants scares me because I don't know if I can find something normal enough I'd want to eat. Still not sure what to do about this.

I thought it was bad until the fried rice that the other picky friend ordered came in, and he started picking out every bit of vegetable and onion from it.

Funny you mention that vegetables are what is being picked off. From my experience most picky eaters are people who grew up unhealthy and cannot eat healthy or fresh foods. They prefer processed unhealthy stuff. My best friend says she's picky but it's mainly because all she eats is pasta casseroles and rices. Only vegetables she eats are things like canned peas and things like that. Obviously not all picky eaters are like that but most I have seen are.

This. Every picky eater I've met grew up very poor and won't eat things like vegetables or seafood. Most of them have seemed to break the habit as they age though, there's only so many business lunches you can order Chicken fingers at before people start thinking it's a sign of larger issues.

I don't think it has to do with growing up poor. I grew up poor and it meant we had to eat whatever my mother served. That meant learning to like eating eggplants, mushrooms, olives, okra, etc.

I think it has to do with the culture in the West where both parents work and cheap food doesn't mean veggies, it means KFC. Kids grow up without needing to try new foods and with the privilege of simply not eating what they don't like.

I'm late but yellow mustard makes me gag even if it's such a tiny amount that most people wouldn't taste it. I once took a bite out of a sandwich that had a tiny bit of mustard on it because the person making it didn't wipe the knife off before cutting it. I didn't even see the mustard but one bite and I gagged. Literally can't even swallow it. Even the smell is nauseating for me.

I don't have a dislike for burgers, but I can only take about three bites before my mouth is bored of them and then it becomes a chore to eat. Beef tastes of nothing to me, and I've eaten it at multiple restaurants to try and 'train myself' to like it. I usually give up half way through.

In all seriousness though, taste preference is really easy to change. There are a handful of things you may never like, but if you force yourself to eat foods you don't like, they will eventually grow on you. They won't be your favorite but you'll definitely expand your taste. I learned this the hard way by spending 4 weeks in a country where I had 0 access to "normal" food 90% of the time. By the end of the trip I enjoyed many of the things I hated at the beginning. I went from choking down 2 or 3 bites of muck to eating whole meals in about a week. Unless you have dietary restrictions you can easily change.

when people are real picky eaters you have to cater to them fully because they won't shut the fuck up about it because they feel discriminated against. if you don't like onions that doesn't make you a picky eater. if someone won't eat anything but chicken fingers, fries, and mac and cheese then they are, and this severely limits the things you can eat with them because you have to go somewhere that has one of their top 3 foods or they won't fucking eat it. in this scenario no one can go get ramen or pizza or mexican or chinese because they have to cater to this one person who eats nothing but french fries because they have failures for parents.

no one sane gets mad at someone for disliking things with strong flavors like onions or gross textures like mushrooms, it's when they've refused to try new things their entire life so their taste consists of literally 5 foods.

Idk, I'm one of the pickiest eaters I know and it's because I can't deal with the texture or taste of some foods without feeling sick. It may be because of autism, but I always feel horrible when I can't eat something because of it. Some people can't help it at all, and it sucks being picky. I wish I could enjoy food normally, and I'm sure most picky eaters do, too.

Not to mention, some people have certain taste receptors others don't, so certain foods can end up tasting repulsive to one person and good to another, like cilantro or dark green vegetables.

Nah, I was always trying new things.(except from when I was a little kid) I want to be able to eat tomato so badly and I just can't. I want to be able to eat mushrooms, they taste SO FUCKING GOOD but they feel gooey and slimey. Like, I can eat some of those if it's with other food and not too many, but they still annoy me a bit. Yesterday I ate at a friend, delicious pasta with cheese and mushrooms. I ate all the mushrooms from my plate in my first bites with the rest of the food, so that I could have only pasta on my last because I don't like mushrooms.(was fine, but I would definitely prefer if I could just take them out and I would have done so if I was alone at home)

Edit: also, I'm kind of relieved lately, because I started liking more food. People have always told me it will happen when you grow up, everyone says it happened to them around 20(I'm some years late but I can see it's starting). I honestly have been trying everything forever, textures still bug me, I always try or even eat a lot of food that friends made although it has stuff that I don't really like, but only recently I started liking some more flavors. Textures still annoy me and I hate it.

Nah I'm not worrying that I might not like something, I just I don't like stuff, there's nothing more to that. i don't think it's something mental, it's a characteristic(that maybe goes away with age?). I can eat pizza, for example, with mushrooms. Sometimes they don't bother me because they are well cooked(I think?), and you can just bite into them and it's just the taste of mushroom that I like and a normal texture, sometimes(well, usually) they are exactly like you got them out of a can, that sound and feeling like you're biting plastic, and they bother me. I'm never worried, I just bite and if it feels weird I take out the big pieces or endure it.
There are people that don't like jelly, but are not generally picky. Is that mental? I can't understand why they don't like it, just like others can't understand my weirdnesses, but I accept it.

*I also stopped giving a shit 2-3 years ago, I saw difference indeed, but only a really small part of it was mental. 5-6 years ago I wouldn't touch things I knew I don't like, now I can eat them and don't act like a spoilt child(I really couldn't eat those things though, I remember how I felt when I chewed them) but I still don't like many things, and I still will take the onions out of my bolognese if they bother me when I'm alone lol.

Totally. I prefer pepsi but the difference is very small. I actually don't really love pepsi OR coke, but I like the diet versions. I can definitely tell the difference between diet pepsi and diet coke, but it's not that big a deal. It was an odd statement to hear, but I don't care to argue over silly things so I was fine to let it go and figure out a means of compromise.

It did get me to ensure my dishes are clean when washed by hand so there is that. I always do a "smell-check" now for residual odor because I did notice an odd smell on certain dishes when used for particular foods. For example, canned baked beans leave a very unpleasant odor behind on cheaper teflon and it's hard to get the scent out for some reason so I use better pots/pans for those. I wouldn't say it is exactly the odor of what was on it prior but it comes close. So a little bit more elbow grease, some mix-and-match with cookware and all is well.

Former picky eater. I missed out on so many great things. My granny would try her best to get me to eat strawberries & I wouldn't. Not talking store bought... These were family farm grown. Now that she's deceased & I'm an adult, I realize I was an asshole kid that didn't want to try new stuff. That's when I decided to try new foods. I started slow with broccoli & brussle sprouts and it's been an amazing adventure since I made that decision. That was about 10 years ago & now I crave new things. The most common commercial mushrooms typically have a similar texture, but certainly not always. Button mushrooms are just one species, there are many kinds of edible mushrooms, like morels, porcini, chanterelles, and chicken of the woods - all have pretty distinct flavours and textures.

The thing is, just trying it is what we want. Don't care if you have to spit it out or it makes you gag. I can't have squash, it makes me gag. Isn't the taste, but the texture. But just trying it, is all. One bite and I won't push it further. drawing it out 20 minutes causes the problem and anxiety. The judging does happen until you refuse. Then it is just seen as childish. Because different people make things differently. You may have only had it prepared badly. But they may prepare it in a way you don't like. And if you are gaging on every possible new food, then that is probably a different problem.

Me personally, it's squash. I can't stand the texture. I can't stand it in anything. But I will try it if someone gives it to me and can most likely take a single bite. Same with water chestnuts or baby corn. I can't stand those either. But I won't turn down a dish because it has them. I don't like eggplant, but if someone says it is good, I'll try it. If someone gave me loved and onions, I would probably try it. Why? Because what do I have to lose?

I've also lived in South America. Know two common cuisines there? A Chicken soup with everything in it (head, heart, feet, etc) and guinea pig. I has no international of ever eating said things in my life. But I tried them. And the soup was good. Even the necks and heart. The guinea pig? Not so much. There was nothing good about it that I remember. But I would again try that. Because I honestly don't remember what I didn't like about it.

Why close yourself off to it? If there is no allergy, there is no reason to not try. Food is prepared well and poorly all over. Who is to say you haven't had something made right.

Or how about just let people eat what they want to eat? I'm a musician, and I've made some music that some of my friends and family don't care for. Yeah I put a lot of effort into making it but I'm not going to push it in their faces if they obviously aren't into it. If they're not interested, I'll move on, because it's obviously not their taste (a cappella music often isn't many peoples' taste). I respect that. I don't understand why others don't respect my taste, in this case with food.

And I can't imagine how much more embarrassed and stressed I'd be after gagging in front of someone who put the effort into preparing a nice meal for me.

Listening to a 3+ minute song is different than a 3 second bite of food. Even then, I am more glad you are willing to try and gag then refuse.

I am also someone who if they ask me to listen to something and comment, I will. Even for things like rap which I don't like. I'm not going to turn it away because I don't like that type of music. I know it means a lot to people to put forth that effort. The only difference would be being interrupted constantly for it. But once every few days, sure, I'll give a listen. You revised the one I listened to an hour ago, I'll give it another go.

It's a simple "hey, you should try this."

"Sure!" Even with a gag you can quickly go "nope, not my thing at all."

Comparing music and food? One is just listening which you do all day long. Even the worst music isn't repulsive, nor does it stimulate your gag reflex. But food you find repulsive? Try putting that inside your body. It really is completely different. Eating food is personally intimate because it comes in physical contact with your internals. Listening to music is nothing like that at all.

This it here. Food combined in different ways tastes absolutely different. Many cuisines have 70% the same ingredients, but a couple differences make it unique to a part of the world with rationally different flavors and textures.

It's not that it's bad to have your own likes and dislikes, all we ask is for picky eaters to try new things, especially if we made them or if we know they could like them. My girlfriend is an incredibly picky eater and it really limits the way I can cook so when I'm trying to make something new or that I think she could like I'd really appreciate if she gave a single bite before discarding what I made. Fortunately she sometimes lets her guard down and discovered she loves mushrooms and whipped cream recently.

One meal that sticks out included yogurt as a hefty portion of the dish (for $10 that seemed like a cop out to me). And in this yogurt you were supposed to mix some kind of lemon juice and saffron. And btw, if you've never dealt with it, saffron is like tiny tiny quarter inch long brittle strings or something. Adding the pinch of saffron to the quart of yogurt made less than no difference and I would have never used it otherwise. If anything, I kept getting those little sticks or whatever in every other bite and yogurt isn't something you typically associate with tiny semi crunchy things. 1/10 would not cook again.

I was at a really nice resteraunt the other day, having a nice new years eve dinner. Instead of a desert, I ordered the truffle gouda brisket mac n' cheese, because I do like truffles and it sounded amazing. It gets to the table, looks amazing, take a huge enthusiastic bite, and nope, mushrooms.

Mushrooms everywhere, I despise mushrooms. There is not a single food item I despise anywhere near as much as mushrooms. So I'm sitting there, trying to pick around it and play it off. But nope, just can't. My hate for mushrooms overwhelms me. And it felt pretty shitty.

It's a fungus, so yes and no. It's not quite a mushroom, it's a root fungus that's simular, but textually very different.

That's a big thing for me, texture. I really like the taste of truffle oil though, and I do enjoy shaved truffle, but whole/sliced mushrooms make me ill.

I've had to do this when I was 13 or so. First time staying at a friend's house their parents invited me to eat supper with them. They cooked mushroom stuffed chicken and peas&carrots and green beans. I would rather starve than eat greens at my house, but I realized that it was really nice of them to make me dinner and finished it.

How is not liking a single food picky? I've had people all my life make a huge goddamn deal that I hate onions. I've been tested a few times by my parents who insist that I just don't like the thought of onions and I have been able to tell almost every time. It was actually a relatively big argument the last time I visited my parents.

I consider myself an above average cook, and I'm definitely a foodie. The ONLY things out there that I hate is onions and processed peas and I have a books worth of recipes where I exclude onions and they still taste great.

The taste of mushrooms sauteed and then mixed with cream/salt is possibly the best way to top a steak. mushrooms are absolutely amazing, but yes they take ages to be able to enjoy. As a kid I hated them.

First of all, when did I say I was American? I mean, I am, but you just kind of made that assumption. Don't throw us all under the bus like that just because I'm picky. Second, I've lived in both Canada and England for periods of time and saw plenty of adult picky eaters there. It's not just an American thing.

Olives are foul. I don't like the taste and I'll happily pick them off a pizza. Mushrooms I'll eat if served, but I certainly won't willingly select a mushroom-based dish at a restaurant.

Coriander leaves are the worst though. Tastes like metal or soap and ruins a whole dish. Apparently this one's genetic though.

And I can't stomach the thought of eating meat. Mainly just a mental thing, but I'm very happy just avoiding it altogether.

You probably don't care about my advice, but find which way you liked them cooked.

I hate boiled asparagus, but love broiled/baked asparagus. I hate brussel sprouts unless they are pan fried with olive oil and a little pancetta. I can't eat processed peas, but love them if I shell them myself and use a generous amount of salt and pepper.

My parents just sucked at cooking when I was a kid so I just assumed I hated vegetables, when in reality I just hadn't had properly prepared veggies.

Well no. I like them all now. If I didn't force myself I wouldn't like most of the food, music, comedy, or movies I do now. I'd be completely different, and a lot more closed off to new experiences. I started doing it out of necessity(mom made food, I ate it no matter what), but I routinely force myself to experience things I don't mesh with because I think it deepens my experience as a person. I think when you allow yourself to be picky you shutter off wide swaths of experience, and that is ultimately damaging. Just my opinion though.

EDIT: though sea urchin is awful, it's always fun because it's become a little game now. Plus people get a laugh out of me eating something disgusting, so it's fun for the whole group, haha.

I'm not much of a beer drinker, but there are definitely times when I just want one. With certain meals, backyard BBQ, etc. I really do enjoy it. That said, the whole "I'm going to choke down a case of Milwaukee's Best even though it's disgusting just because it's beer" is stupid.

just slice up some mushrooms and sauté em till they become nice and crispy and shriveled. doesn't give you much of that mushroomy taste/texture, but it's a nice vessel for putting salt and oil into your body.

I have had a lot of mushrooms that other people are crazy about like grilled portabellas stuffed with things I love like cheese and crab and I still hate them. I'm like "why did you ruin this cheese and crab." Ordered truffles on more than one occasion too because I want to experience the amazingness that other people do, apparently, but I'm always disappointed.

Literally almost everyone uses it incorrectly on reddit. Also the word "meta". What the fuck is with you guys and using this word so often not just incorrectly, but kinda... in a way, opposite of what it means. Something is meta when it references or comments on itself. Something that just references something else is not meta. Example of a non meta reference---> ok so like say early in the day there's a front page post with like whatever, a picture of dog in a little dog fireman's helmet and I guess a like yellow fireman's whatever thing overcoat. Ok so then later in the afternoon there's an ask reddit thread doing like let's say "Reddit, what's the weirdest thing your pet ever did?". And then but one of the top replies is some story about how her car once knocked over a scented candle and half the dining room was damaged by the fire. And here's the crucial part: one of the top replies to that cat story is one of the post funny algorithmic reddit joke makers saying "if only fire dog had been there..." some fucking yutz says "it's getting meta in here!". No the last guy is fucking wrong. That's not a meta reference that's just a regular reference. Just because both of the things are on reddit doesn't make it meta. Imagine a big circle with several smalls squares floating around in it. One little square inside the big circle pointing to another square, isn't meta and them both being in big circle doesn't change that. Most of the time I don't give a shit about usage. Hell Im a no shame adopter of going full blown figurative "literally". But meta is an important word with a precise meaning and it's importance and usefulness is in that precision. Also Im typing this all out now so I can just paste it later. What was this even about?

I used to hate mushrooms, then I learned you can saute into whatever flavors you want; take some olive oil, butter, onions, garlic and mushrooms, add to basically anything. You will thank me. I have this as a base to pasta sauce and fajitas. Amazing.
