Man, I'm in the Twin Cities area. The weather keeps getting cooler every day but still awesome in the middle. It's just gonna get cold and suck soon. The bittersweet part is that it's perfect now. Not time for stew yet, even though I'd eat it anytime! ๐
Southern Ontario, Canada here. It's getting quite chilly in the evenings and overnights now. And today didn't get very warm at all even at mid day. Fall is my favourite season by far though, my favourite outfit is jeans and a sweater :) (26/male/Canada)
Northern Alaska here. Snow started falling 3 days ago and didn't stop until today, happened so fast that everyone out hunting with summer vehicles (argos/ATV's) got stuck real bad because of the combination of snow and mud. Temp was about 15 degrees F with it going down to 0 with windchill.
Just 2 days ago I was hunting with my ATV, and today I went out with my snowmachine, man even the elders that have lived here 50+ years cant remember snow coming down this fast.

As another Dutchy the weather here is great! Hasn't rained for a week straight and we're still getting august-like heat (86 F today). Can't imagine what northern alaska is like.. personally I can't bear the short days in winter, so this is as far up north as I am willing to live
In south-east England Tuesday was the hottest September day since 1911. 34C in some areas. You guys aren't too far away from here so I'm not surprised you're having nice weather!

These 20ยฐ temperature swings are really fucking with me. 4 at night but 25 when I leave work...I can't wait until it's actually autumn and this shit straightens itself out.
I think the consensus is that pre-cut stew meat is generally lower quality and more expensive per pound (at least true at my local grocery stores, and I've seen it discussed in a few food subs), plus you can't choose what size your pieces are. I would use a good-sized boneless chuck roast, personally.
Good quality roast and good quality stewing meat are totally different though. For a roast you want only muscle and a little fat, but for a stew you want something gristly. The tendons and connective tissue will turn to gelatin and thicken the soup as well as being the tenderest and most delicious part of the stew.
Well I think anything from the chuck would fit that bill since it's near the shoulder. I might be wrong, though, I'm not anywhere close to an expert on cuts of beef.
I'm in the south, and I can't wait for fall! It was 91, and humid as fuck yesterday. Last Thursday it was 97, with 100% humidity. This summer has been the hottest I can remember, swamp ass weather is almost over, hallelujah!

Better than having chills running through your body as the cold slowly makes your hands, ears, nose and neck go completely numb, while you hop into your freezing cold car that takes 15 minutes for the heat to get warm and you're slipping and sliding everywhere from the snow and ice. Everything around you is mostly dark and gloomy, and you don't want to do anything outside because you need 4 layers of clothes and the cold makes your face and body go stiff and numb.
Ah fuck here we go with this argument again. Whenever I put on more layers all I do is sweat inside my sweater and the jacket sleeve is that weird satin/w.e material it gets all sticky to your arms god I hated that

Not beyond a certain temperature lest you are gonna wear a mask over your face and your feet are gonna freeze no matter what - not to mention that all attempts are futile if your climate is also humid. I live in a very humid climate where it never freezes too harshly, however, everything both inside and out is perpetually wet and cold. Takes a larger toll on your joints than dry cold.
But at least it's a change. I used to live in Chicago where yeah it was cold in the winters, but it was also hot in the summer and you could actually feel the difference. Now I live in the south and it's just hot all the time. It doesn't matter what time of year it is, it's just hot outside. That's it. I hate it.
I lived in Fort Myers for a few years and this was one of the reasons I was so happy to move back to the midwest. It sounds really cliche or even ridiculous that you get tired of sunny warm days, but I love the fall. My ideal day is like 55 degrees. Also, I feel like my memories from my time there just completely blur together because there was no seasonality to break it up.

Where it was 120ยฐ for some days this summer.
The sweat rolls down your body. Your hair is wet from sweat. The sweat rolls down into your eyes and stings. You go to the bathroom where you turn on the cold tap because the hot tap will give you third degree burns. Even then, no cold water comes out. The water is hot and not refreshing while you try to get the burning sweat out of your eyes. You towel your head off, the sweat starts again, and you go out to your car.
The steering wheel is hot enough to give your hands burns and blisters. So is the shift knob. Sweat starts dripping into your eyes again. You start the car and the air conditioning blows hot and continues to blow hot air at you for a good ten minutes before it starts to cool.
That's when I pull on my motorcycle gloves. Because you cannot touch the steering wheel or shifter without getting burns.
Outside, the road is literally melting. The asphalt is probably close to 150ยฐ and is starting to turn liquid again. It sticks to your shoes. You cannot stand where the sun is shining on the road because it is so hot you feel it through your shoes and it hurts.
It is only about noon and you have already been through a gallon of water since the sun and heat woke you up about 5:30AM. But you feel tired, you haven't peed, and you're starting to feel sleepy and woozy. Time to drink one of those 625mL bottles of Pedialyte, since that's the best thing to put a lot of sodium and electrolytes back into your body.
Except it isn't very cold. The sun has brought your kitchen up over 90ยฐ even with the AC running. Meaning that the refrigerator is struggling to keep things cold.
That's what the summers are like down here.
I lived through a few winters in central Oregon, so I know what it's like. I'll take the desert for a couple of reasons:
Things are OK once the sun goes down. You can hang around the patio all night in a t-shirt and shorts.
Hahahaha ouch, I love it. Even though you're in the most extreme area I'd still pick that, or at least somewhere a bit more tolerable instead of being in the cold. I'd rather be all hot and sweaty as long as the sun shines for more than 30 minutes a day...

I been in Las Vegas and Death Valley in July and yes the air is incredible painfull, but the thing is to me that when you are hot its fast to chill down by splashing water or turning on the AC but if you are cold / your house is cold it takes long time to heat up / get warm again . And you have to take several lays of clothing on to go pickup the milk. But i only been there in about a month so i have no idea what it is to live there , you may be right i might end up hating it if i spend enough time there

This year hasn't really been that bad, relatively speaking. 2011 my hometown where I was working an internship (road construction) was over 100ยฐ for like 117 straight days. And not just 101-102 either; shit was like 107-108 every day. Longest three months of my life. And before Arizona jumps in, we have humidity in north Texas. It's not a dry heat. There's a huge difference.
Same with me but stopping in Miami as a Canadian, my god it was so fucking humid, and I ended up going to Colombia and it was no where as disgusting as those feels outside Miami airport
That used to be the case years ago. There would be one night of the year everyone in the city would find it difficult to sleep.
I now own 3 fans in my flat. And working with a lot of US people, they are shocked by our summers especially because we don't have a culture of home AC.

I was in Atlanta for DragonCon, bloody hot IMO, left the airport in Ireland to overcast chilly weather.
That being said, at least America knows how to do air conditioning, you wouldn't know it was 28C outside at D*C whereas you would know it was 23C at Dublin Comic Con, really frakking muggy inside

I like to do food prep with soups, stews, chilli, and things like that, but not much else. I am waiting for it to drop below 60F on average so I can do that again.
I made beef stew using the same recipe! It came out delicious!! My one recommendation: definitely take the few extra minutes to brown the beef separately. Packs in flavor & totally worth it.
Edit: forgot to add, I made it in the slow cooker. Meat was nice & tender.

Thanks for the awesome tip, how long did you keep it in the slow cooker and at what setting? Slow cooker seems to be an easier bet for making the stew.
I cooked it on high for 3-3.5 hours in the slow cooker. There was enough liquid with the wine & broth, but I used 2 lbs of beef instead of 3. Browned the beef, added in all the other ingredients, I was basically able to set it and forget it. I added the potatoes & carrots at the same time and it turned out fine (just don't use baby carrots or make pieces too small. Medium (1 inch cubes ) at least. I haven't made this dish since last January. Will recreate as well & take down notes this time around & post.

Also interested in the slow cooker adaptation! Did you add the potatoes at the beginning? I'm always afraid they'll fall apart if I cook 'em all day.
It took about 3-3.5 hours on high to cook. I used red potatoes (or white or golden would work too, I think non-waxy being the key) in medium/large cut pieces (approx 1 sq in). They held their shape.

red, white and golden potatoes are the more waxy ones compared to russets.
Whenever I make soup or stew with potatoes I usually double potato. Add small potatoes in the beginning so theyvdusolve then I add more towards the end for like potatoes. I use soups and stews to cheaply stave off starvation, so I find its a good way to pack a lot of value into small ammounts.

I've not made this particular recipe, but for browning things for a crockpot, I always do it in another pan on the stovetop. The slow cooker doesn't get too a high enough temperature to brown the meat effectively.
What you're doing in this recipe is essentially with high temperature quickly cooking just the outside of the meat rather than cooking the whole piece of meat. By doing this you create a caramelized outer layer that has a lot of flavor and by slowly cooking the inside (after the quick sear and throwing it in the lower temperature cooker/oven) makes it fall-apart tender. Hope that helps!
I would recommend separate pot (depends on the slow cooker perhaps). Mine requires a separate pot. I season the beef ( salt & pepper), lightly dredged in flour, then browned. The flour helps thicken the stew sauce as the beef cooks.
As said below, defiantly take the time to sear the meat correctly. I always add a little more wine and a little less water.

I second the sear the meat idea, it's so important for keeping in the natural juices and making the meat tender, plus a good motto for cooking is "brown tastes better" so getting that nice caramelized outside will do so much to add depth of flavour.
Also adding more wine than water is great advice as well, in fact any time you can use a liquid other than water do so, fit example replacing that water with some broth will add more of that depth that you really want in a good stew, it'll boost the flavour of any dish really. For example using milk instead water in a baked good will give it a richer taste.
Sorry for rambling, just felt it might help to elaborate on what u/DriftingInTheDarkness said, all fantastic advice, and applicable in more than just this dish.

Technically you can braise on the stove top. It really comes down to heat distribution. Your meat on bottom may turn out different than on top because of the direct heat on the bottom.
Keep a very low simmer on the stove top.

Stove top stews are great! You want to keep it just below a simmer, with a few tiny bubbles coming up. Stir every 15-20 minutes, it shouldn't be sticking much at that low heat.

I was wondering if it is possible to make a vegetarian version where you substitute the beef with something like mushrooms? Don't get me wrong, I'd love to eat the beef version, but my SO does not ;).
Try mixed root vegetables + squash. Make an onion mushroom gravy then whack the roots and squash in the oven for half an hour with plenty of oil, salt, pepper and herbs. Combine and cook for another half hour.
Man, my mom makes the best beef stew. My favorite meal as a kid and I was so happy when she taught me how to make it. Still doesn't taste as good as hers though.

Water, stock or a little red grape juice and a few drops of vinegar topped up with one of the above. You don't need to worry about alcohol though, it boils at a much lower temperature than water, so in a long slow cook like this it will be 100% boiled off.

You're sort of 1/2 right and 1/2 wrong. "Fatty beef" -- well marbled/small streaks for fat running through the meat like a chuck steak/chuck roast is an excellent cut of meat to use in beef stew.(I'm in the U.S., not sure what the equivalent cut of beef that is where you live. -- wiki says chuck is called "braising steak" in the UK.)
What you want is a cut of meat that has a lot of collagen in it. When the high collagen content meat is cooked slowly at a low to moderate heat (braised) that collagen melts away leaving behind very tender and moist beef. That collagen that melts away gives the liquid of the stew a thicker "good mouth feel" quality. -- Collagen: think gelatin.
--Chuck, short ribs, ox tail---those are the sort of cuts of beef to use.

Solid recipe! The only changes I'd personally make are:
1) Use fresh thyme instead of dried (huge improvement in flavor)
2) Add diced celery (tastes so good in stew and looks attractive)
3) Maybe use chicken stock rather than beef stock, because most store bought beef stocks have a tinny, slightly dirty taste to them. Plus I think the chicken flavor adds more complexity to the stew vs simply adding more beef flavor (which chuck already provides a lot of).
4) Add just a little Worcestershire sauce for a little extra umami punch.
Mix some cornflour with cold water and throw it in at the end. It'll thicken a lot. Makes it easier to get on your bread, and means your steak and veg are covered with a nice thick layer of gravy when you eat them. Looks delicious though.
Aw yeah, I got home from a 13 hour shift tonight and my S.O. had made some beef stew. I threw some chive sour cream in the middle of the bowl and drizzled a little little black truffle oil around it. Totally turned my day around.

Best case someone has to eat around the bay leaf. Worst case someone bites into it and their entire meal is ruined because bay leaves make the liquid they are cooked in delicious but they themselves taste absolutely horrid.
The leaf itself is also very very stiff and inedible. If someone forgets to take it out, I'm inevitably the one who gets it in their stew/soup, and I bite into it and it goes into my gums and shreds my mouth.

it's meals like this that make me question my decision to go pescatarian (only 2+ years ago).
my deceased father used to make a killer beef stew when I was growing up. it was one of the few meals he made (my mom being the primary cook).
anyway this looks really similar. nice and simple-- chunks of potatoes, carrots, and beef. the only thing missing are his classic 'bisquick' dumplings on top
I make a ham soup we call "boiled dinner" (a bad translation of a Finnish word I'm sure) that is incomplete without bisquick dumplings on top. I make it the way my grandma makes it who makes it like her grandma (who I'm sure didn't use bisquick but did dumplings).

Remember, stew beef shouldn't be expensive. No sirloin or round. It turns out chewy. Use a chuck roast, and cut it up yourself.

Per calorie they are the same. Of course if you eat 300 calories of potato and 100 calories of turnips then your carb intake would be different.

Not OP but I am really good at baking Italian bread. Friends come from all around to steal a loaf and I make it at least twice a week. Here's my recipe:
4 cups flour
Dissolve 1 tblsp salt in 2 cups warm water
Dissolve 2 ยผ tpsp yeast in 1 cup warm water
Add tpsp sugar to yeast solution
Mix and roll out until dough is not sticking to hands. Add flour as needed. Separate into 2 separate loaves. Let rise. Flaten and kneed, adding flour as needed. Let rise again. Flaten again. Roll into loaves and place in whatever you will bake it on. (Stoneware works great!) Cut slit in center. Brush with melted butter. Bake at 425 for 45 minutes
Depending on your climate, altitude and water, the process may require some tweaking, but eventually you'll get it to your own personal level of perfection!
I was in a rush and grabbed some random one online. TBH, it wasn't very good. I wouldn't make it again. It was flour, water, oil, sugar, salt, yeast. Basic white bread but I think the ratios were off or something.
Stews are a great place to start. Either in a slow cooker or a pot. Buy all your vegetables fresh and it's good practice cutting everything in a nice uniform size and basically slow cook the dish.

Beef soup. Combine a 2T of corn starch and a 1/4c of H20. Mix it in bring it to a boil. It will look amazing.

For stews I would shy away from corn starch which is brilliant for thickening a lot of sauces yes. For beef stew I season the meat, dredge the cubes in flour and brown them in butter not oil. This creates a natural dark roux as the beef Browns. Add a touch more butter and flour, and then your liquid scraping all the burnt bits off before you start your simmer/reduction

Alberta, Canada. Where daytime highs get to the low 30s, and lows get to 8-10 degrees in the summer. To be fair, my ideal temperature is 16 degrees, which I'm pretty sure is lower than most people's liking

I love a nice stew of any sort in the winter...comfort food. Plus you can use any mix of meat and veg you have on hand, no set recipe. Chicken or rabbit are my faves.

I've got an enamel-coated cast iron Dutch oven that I use for these applications, but Including the lid the damn thing is like 20lbs unloaded. I'll have it for decades, sure, but it's not the most tactical of cookware.

It's only 19C here today so it's cool enough for stew. I happened to have 2lbs of round steak in the fridge that needed a recipe so I'm trying this one. I've got a beef bourguignon recipe that I've used for years but this one uses seven (7!!!) cloves of garlic to the three that I normally use, two cups of red wine compared to one in the other recipe, and it uses a splash of balsamic vinegar that my other recipe doesn't use at all so I'm really curious to see how it's going to turn out.
I'm taking a pass on the 1 ยฝ tsp sugar that this recipe calls for though. I know that a lot of older recipes use a bit of sugar to cut down the acidity but sugar in beef bourguignon is just weird to me.

dear sir that looks delicious and i'm of the same mind, great seasonal fare. may i suggest a glass pan full of water in the bottom of your oven for the first 20 minutes of your bread bake. keeping the outside of the loaf moist prevents the crust from drying prematurely, allowing the interior gluten structure to expand better, leaving a lighter crumb and crisper crust :) they have steam injectors at bakeries for that.

Bread looks under-done. Consistency of stew looks wrong, too thin. Carrot and potato looks undercooked and hard. Meat looks dry on top and overcooked. 2/10 pls learn to cook.
I adore Beef Stew when it's hot and fresh but when the next day rolls around and I pull the leftovers out of the fridge...and they're all clumpy and...no. I just can't.

I'm not sure what clumpy means. Maybe that the fat has congealed a bit? Warm it up slowly and the fat will melt back into the stew.
Stews are generally even better as leftovers (more time for flavors to meld).
This isn't thick gravy so it's not clumpy. Try this recipe and you will love the left overs. They are almost better because everything marinated longer.
I meant the fat has congealed (as others said) and the broth has been totally absorbed, so there's no "stew." It's just a pile of chunky meat, carrots and potatoes.
Just heat it up. The fat congeals when it's cool, so all you have to do is warm it back up on the stove top, then you're back n business. You'd be surprised how much liquid gets absorbed/congealed.
It looks ok but I'm a little annoyed about how big all of the pieces are. Foods that are based on multiple ingredients should be found on every bite that you take. Unless you have a massive mouth there's no way you'll fit a piece of beef, carrot and potato (and possibly some kind of leafy green) into every bite.

Did a stew tonight for the same reason! I overestimated the size and had to dump the whole thing in to a tall pot, took me three hours to reduce the thing. Didn't look as good as yours, but I was happy with the first stew of fall. I substituted half my potatoes with cauliflower, and added celery and beans.
We lurve dishes like this, and fresh bread and butter in the rich gravy is one of life's little pleasures. This method makes just about my fave gravy, can eat it from a dish like soup.

Northern Alaska here. Snow started falling 3 days ago and didn't stop until today, happened so fast that everyone out hunting with summer vehicles (argos/ATV's) got stuck real bad because of the combination of snow and mud. Temp was about 15 degrees F with it going down to 0 with windchill.
Just 2 days ago I was hunting with my ATV, and today I went out with my snowmachine, man even the elders that have lived here 50+ years cant remember snow coming down this fast.

I think the consensus is that pre-cut stew meat is generally lower quality and more expensive per pound (at least true at my local grocery stores, and I've seen it discussed in a few food subs), plus you can't choose what size your pieces are. I would use a good-sized boneless chuck roast, personally.

Good quality roast and good quality stewing meat are totally different though. For a roast you want only muscle and a little fat, but for a stew you want something gristly. The tendons and connective tissue will turn to gelatin and thicken the soup as well as being the tenderest and most delicious part of the stew.

Better than having chills running through your body as the cold slowly makes your hands, ears, nose and neck go completely numb, while you hop into your freezing cold car that takes 15 minutes for the heat to get warm and you're slipping and sliding everywhere from the snow and ice. Everything around you is mostly dark and gloomy, and you don't want to do anything outside because you need 4 layers of clothes and the cold makes your face and body go stiff and numb.

Not beyond a certain temperature lest you are gonna wear a mask over your face and your feet are gonna freeze no matter what - not to mention that all attempts are futile if your climate is also humid. I live in a very humid climate where it never freezes too harshly, however, everything both inside and out is perpetually wet and cold. Takes a larger toll on your joints than dry cold.

Now I live in the south and it's just hot all the time. It doesn't matter what time of year it is, it's just hot outside. That's it. I hate it.

I lived in Fort Myers for a few years and this was one of the reasons I was so happy to move back to the midwest. It sounds really cliche or even ridiculous that you get tired of sunny warm days, but I love the fall. My ideal day is like 55 degrees. Also, I feel like my memories from my time there just completely blur together because there was no seasonality to break it up.

Yuma, Arizona. The hottest city in the United States. Where I live.
Where it was 120ยฐ for some days this summer.
The sweat rolls down your body. Your hair is wet from sweat. The sweat rolls down into your eyes and stings. You go to the bathroom where you turn on the cold tap because the hot tap will give you third degree burns. Even then, no cold water comes out. The water is hot and not refreshing while you try to get the burning sweat out of your eyes. You towel your head off, the sweat starts again, and you go out to your car.
The steering wheel is hot enough to give your hands burns and blisters. So is the shift knob. Sweat starts dripping into your eyes again. You start the car and the air conditioning blows hot and continues to blow hot air at you for a good ten minutes before it starts to cool.
That's when I pull on my motorcycle gloves. Because you cannot touch the steering wheel or shifter without getting burns.
Outside, the road is literally melting. The asphalt is probably close to 150ยฐ and is starting to turn liquid again. It sticks to your shoes. You cannot stand where the sun is shining on the road because it is so hot you feel it through your shoes and it hurts.
It is only about noon and you have already been through a gallon of water since the sun and heat woke you up about 5:30AM. But you feel tired, you haven't peed, and you're starting to feel sleepy and woozy. Time to drink one of those 625mL bottles of Pedialyte, since that's the best thing to put a lot of sodium and electrolytes back into your body.
Except it isn't very cold. The sun has brought your kitchen up over 90ยฐ even with the AC running. Meaning that the refrigerator is struggling to keep things cold.
That's what the summers are like down here.
I lived through a few winters in central Oregon, so I know what it's like. I'll take the desert for a couple of reasons:
Things are OK once the sun goes down. You can hang around the patio all night in a t-shirt and shorts.
You don't have to shovel air conditioning.

I been in Las Vegas and Death Valley in July and yes the air is incredible painfull, but the thing is to me that when you are hot its fast to chill down by splashing water or turning on the AC but if you are cold / your house is cold it takes long time to heat up / get warm again . And you have to take several lays of clothing on to go pickup the milk. But i only been there in about a month so i have no idea what it is to live there , you may be right i might end up hating it if i spend enough time there

This year hasn't really been that bad, relatively speaking. 2011 my hometown where I was working an internship (road construction) was over 100ยฐ for like 117 straight days. And not just 101-102 either; shit was like 107-108 every day. Longest three months of my life. And before Arizona jumps in, we have humidity in north Texas. It's not a dry heat. There's a huge difference.

I made beef stew using the same recipe! It came out delicious!! My one recommendation: definitely take the few extra minutes to brown the beef separately. Packs in flavor & totally worth it. Edit: forgot to add, I made it in the slow cooker. Meat was nice & tender.

I cooked it on high for 3-3.5 hours in the slow cooker. There was enough liquid with the wine & broth, but I used 2 lbs of beef instead of 3. Browned the beef, added in all the other ingredients, I was basically able to set it and forget it. I added the potatoes & carrots at the same time and it turned out fine (just don't use baby carrots or make pieces too small. Medium (1 inch cubes ) at least. I haven't made this dish since last January. Will recreate as well & take down notes this time around & post.

Whenever I make soup or stew with potatoes I usually double potato. Add small potatoes in the beginning so theyvdusolve then I add more towards the end for like potatoes. I use soups and stews to cheaply stave off starvation, so I find its a good way to pack a lot of value into small ammounts.

I've not made this particular recipe, but for browning things for a crockpot, I always do it in another pan on the stovetop. The slow cooker doesn't get too a high enough temperature to brown the meat effectively.
What you're doing in this recipe is essentially with high temperature quickly cooking just the outside of the meat rather than cooking the whole piece of meat. By doing this you create a caramelized outer layer that has a lot of flavor and by slowly cooking the inside (after the quick sear and throwing it in the lower temperature cooker/oven) makes it fall-apart tender. Hope that helps!

I would recommend separate pot (depends on the slow cooker perhaps). Mine requires a separate pot. I season the beef ( salt & pepper), lightly dredged in flour, then browned. The flour helps thicken the stew sauce as the beef cooks.

As said below, defiantly take the time to sear the meat correctly. I always add a little more wine and a little less water.

I second the sear the meat idea, it's so important for keeping in the natural juices and making the meat tender, plus a good motto for cooking is "brown tastes better" so getting that nice caramelized outside will do so much to add depth of flavour.
Also adding more wine than water is great advice as well, in fact any time you can use a liquid other than water do so, fit example replacing that water with some broth will add more of that depth that you really want in a good stew, it'll boost the flavour of any dish really. For example using milk instead water in a baked good will give it a richer taste.
Sorry for rambling, just felt it might help to elaborate on what u/DriftingInTheDarkness said, all fantastic advice, and applicable in more than just this dish.

Technically you can braise on the stove top. It really comes down to heat distribution. Your meat on bottom may turn out different than on top because of the direct heat on the bottom. Keep a very low simmer on the stove top.

Don't let it run at a true boil for too long, get that low bubbling simmer going, it can end up stringy and dry. Slow.

Stove top stews are great! You want to keep it just below a simmer, with a few tiny bubbles coming up. Stir every 15-20 minutes, it shouldn't be sticking much at that low heat.

Try mixed root vegetables + squash. Make an onion mushroom gravy then whack the roots and squash in the oven for half an hour with plenty of oil, salt, pepper and herbs. Combine and cook for another half hour.

Water, stock or a little red grape juice and a few drops of vinegar topped up with one of the above. You don't need to worry about alcohol though, it boils at a much lower temperature than water, so in a long slow cook like this it will be 100% boiled off.

You got it. The vegetables take less time to cook than the beef. If you put the vegetables in at the beginning, after a few hours of cooking they would be mushy. Nobody wants mushy vegetables.

I thought fatty meat has the fat melt away while cooking, leaving the meat tough.
While lean meat has a chemical in it that tenderizes the meat if slow cooked. Can anyone confirm or deny this?

You're sort of 1/2 right and 1/2 wrong. "Fatty beef" -- well marbled/small streaks for fat running through the meat like a chuck steak/chuck roast is an excellent cut of meat to use in beef stew.(I'm in the U.S., not sure what the equivalent cut of beef that is where you live. -- wiki says chuck is called "braising steak" in the UK.) What you want is a cut of meat that has a lot of collagen in it. When the high collagen content meat is cooked slowly at a low to moderate heat (braised) that collagen melts away leaving behind very tender and moist beef. That collagen that melts away gives the liquid of the stew a thicker "good mouth feel" quality. -- Collagen: think gelatin.
--Chuck, short ribs, ox tail---those are the sort of cuts of beef to use.

Solid recipe! The only changes I'd personally make are:
1) Use fresh thyme instead of dried (huge improvement in flavor)
2) Add diced celery (tastes so good in stew and looks attractive)
3) Maybe use chicken stock rather than beef stock, because most store bought beef stocks have a tinny, slightly dirty taste to them. Plus I think the chicken flavor adds more complexity to the stew vs simply adding more beef flavor (which chuck already provides a lot of).
4) Add just a little Worcestershire sauce for a little extra umami punch.

Mix some cornflour with cold water and throw it in at the end. It'll thicken a lot. Makes it easier to get on your bread, and means your steak and veg are covered with a nice thick layer of gravy when you eat them. Looks delicious though.

Best case someone has to eat around the bay leaf. Worst case someone bites into it and their entire meal is ruined because bay leaves make the liquid they are cooked in delicious but they themselves taste absolutely horrid.

The leaf itself is also very very stiff and inedible. If someone forgets to take it out, I'm inevitably the one who gets it in their stew/soup, and I bite into it and it goes into my gums and shreds my mouth.

Not OP but I am really good at baking Italian bread. Friends come from all around to steal a loaf and I make it at least twice a week. Here's my recipe:
4 cups flour
Dissolve 1 tblsp salt in 2 cups warm water
Dissolve 2 ยผ tpsp yeast in 1 cup warm water
Add tpsp sugar to yeast solution
Mix and roll out until dough is not sticking to hands. Add flour as needed. Separate into 2 separate loaves. Let rise. Flaten and kneed, adding flour as needed. Let rise again. Flaten again. Roll into loaves and place in whatever you will bake it on. (Stoneware works great!) Cut slit in center. Brush with melted butter. Bake at 425 for 45 minutes
Depending on your climate, altitude and water, the process may require some tweaking, but eventually you'll get it to your own personal level of perfection!

I was in a rush and grabbed some random one online. TBH, it wasn't very good. I wouldn't make it again. It was flour, water, oil, sugar, salt, yeast. Basic white bread but I think the ratios were off or something.

Stews are a great place to start. Either in a slow cooker or a pot. Buy all your vegetables fresh and it's good practice cutting everything in a nice uniform size and basically slow cook the dish.

Yup. You can also use flour/roux, but that may 'soften' the flavors a bit.
Corn starch is used to give sweet and sour sauce it's syrupy texture

For stews I would shy away from corn starch which is brilliant for thickening a lot of sauces yes. For beef stew I season the meat, dredge the cubes in flour and brown them in butter not oil. This creates a natural dark roux as the beef Browns. Add a touch more butter and flour, and then your liquid scraping all the burnt bits off before you start your simmer/reduction

I love adding a variety of roots to stews like this:
Parsley root adds a great aroma
Celery root adds a freshness effect
Kohlrabi is also a nice addition
Sweet potatoes are also awesome but you have to add them approximately 30 minutes before you finish because they disintegrate after an hour of cooking
I don't usually add tomatoes to beef stews, because I prefer a sweeter taste.

I really like that pan. I'd use the shit out of a pan such as that. I've got an enamel-coated cast iron Dutch oven that I use for these applications, but Including the lid the damn thing is like 20lbs unloaded. I'll have it for decades, sure, but it's not the most tactical of cookware.

It's only 19C here today so it's cool enough for stew. I happened to have 2lbs of round steak in the fridge that needed a recipe so I'm trying this one. I've got a beef bourguignon recipe that I've used for years but this one uses seven (7!!!) cloves of garlic to the three that I normally use, two cups of red wine compared to one in the other recipe, and it uses a splash of balsamic vinegar that my other recipe doesn't use at all so I'm really curious to see how it's going to turn out.
I'm taking a pass on the 1 ยฝ tsp sugar that this recipe calls for though. I know that a lot of older recipes use a bit of sugar to cut down the acidity but sugar in beef bourguignon is just weird to me.

dear sir that looks delicious and i'm of the same mind, great seasonal fare. may i suggest a glass pan full of water in the bottom of your oven for the first 20 minutes of your bread bake. keeping the outside of the loaf moist prevents the crust from drying prematurely, allowing the interior gluten structure to expand better, leaving a lighter crumb and crisper crust :) they have steam injectors at bakeries for that.

I adore Beef Stew when it's hot and fresh but when the next day rolls around and I pull the leftovers out of the fridge...and they're all clumpy and...no. I just can't.

I'm not sure what clumpy means. Maybe that the fat has congealed a bit? Warm it up slowly and the fat will melt back into the stew.
Stews are generally even better as leftovers (more time for flavors to meld).

Just heat it up. The fat congeals when it's cool, so all you have to do is warm it back up on the stove top, then you're back n business. You'd be surprised how much liquid gets absorbed/congealed.

It looks ok but I'm a little annoyed about how big all of the pieces are. Foods that are based on multiple ingredients should be found on every bite that you take. Unless you have a massive mouth there's no way you'll fit a piece of beef, carrot and potato (and possibly some kind of leafy green) into every bite.

Did a stew tonight for the same reason! I overestimated the size and had to dump the whole thing in to a tall pot, took me three hours to reduce the thing. Didn't look as good as yours, but I was happy with the first stew of fall. I substituted half my potatoes with cauliflower, and added celery and beans.
