This is actually a really interesting biological phenomenon. All humans can drink milk when they are young, but only a small portion (IIRC ~20%) can continue to drink milk as they grow up. Those without the gene for "lactase persistence" stop producing the enzyme that allows them to digest milk.

What's really interesting is that lactase persistence appears to have evolved in parallel with bovine herding. Only regions where drinking milk proceed an advantage seemed to adapt to lactase persistence. Because of this, lactase persistence is concentrated in Northern Europe, Western Africa, Arabia, Northwest India, and a handful of other regions.
