As it's an original song that the creator of the video composed themselves, I feel like perhaps this huge effort to make a video for anyone and everyone who exists or will exist is an endeavour to make the song massively popular to the point that it's a cultural musical staple just like the original "Happy Birthday" tune. Like this person is desperate to make some sort of lasting impression on society, to leave something important behind, and this is the way they chose to try to achieve that.

Looks pretty strained, IMO. I'm guessing she's forcing a smile for the effect it has on her voice. Something every call center worker is trained to do.
If you look through the FAQ on their homepage you'll see that they don't make any money from this (they actually lose some money), but they do it because they have fun doing it. They want to make others happy with their personalized birthday song. So, I actually think that her smile is legit, because otherwise she probably wouldn't continue doing it.

Man, my friends and I found this channel probably a bit over a year ago after searching for 'poonami' and having this video come up. I post these on my friends' walls on facebook all the time.

It has been commonly (but incorrectly) associated with Greek ฮฑฮฝฮธฮฟฯ (anthos) "flower", which resulted in the addition of the h to this spelling in the 17th century.
250,000 videos, each at around 1:10. That's almost 4,900 hours of happy birthday recordings. Even if you did that as a full time job, 40 hours a week, recording the songs alone would take ~2.4 years if you were able to do it with absolutely no breaks between each one. Take in the time to even do a shitty editing job and you're easily looking at 3+ years of work at full time to make this much. That's dedication, that is real fucking dedication.
Gotta keep in mind that they'll make 30+ videos from a single recording with all the different themed slideshows and different spellings of the same name. But still an impressive amount of work.
If you look through some of their other videos you'll see that they've done a huge variety of names from different cultures. I assume therefore that there's some culture out there in which Xeest isn't all that unusual a name.

Just pick a few and listen to them in a row. You can tell that each recording is different. I'm sure they have some kind of script or what have you to easily add the different names to their video templates, and probably to upload the videos in bulk to Youtube with correct titles and descriptions and such, but the voice recordings for each name are all unique.

I doubt it's anything that delusional. More likely the reasoning is like this:
The song's copyright holder gets money from video views and avoids the legal weeds around "Happy Birthday to You"
Presumably the singer charges a fee for each and every variant of the song she sings. It's neither the hardest nor the most tedious job in the world.
It's less effort to layer a complete vocal over an instrumental, rather than editing pieces of different vocals together.

250,000 videos, each at around 1:10. That's almost 4,900 hours of happy birthday recordings. Even if you did that as a full time job, 40 hours a week, recording the songs alone would take ~2.4 years if you were able to do it with absolutely no breaks between each one. Take in the time to even do a shitty editing job and you're easily looking at 3+ years of work at full time to make this much. That's dedication, that is real fucking dedication.

Just pick a few and listen to them in a row. You can tell that each recording is different. I'm sure they have some kind of script or what have you to easily add the different names to their video templates, and probably to upload the videos in bulk to Youtube with correct titles and descriptions and such, but the voice recordings for each name are all unique.
