When using a sign my text disappears.

When I use the signs they don't want to work as shown in the clip I've attached, I click off of my sign and the writing disappears. It's confusing as sometimes it will work others it will not. I can't make certain things like my chest room now and cant have my writing in bold or colour, it's very frustrating and I would hope you can fix this?
