cured zombie villager take profession without job site block

I cured some zombie villagers without any job site blocks available nearby and they took professions that, not only don't exist as a work site nearby but also their professions won't go away when job site blocks are made near them. Further, I have not traded with the cured villagers, thus their profession's should not be permanent as they have been.
