You stop sprinting after hitting

Whenever I play server in pvp I usually have to chase the player, but after hitting them once I stop sprinting I also tested this out on normal worlds and it still does this, and I noticed that it also happens to my friend who plays on a Samsung Android, I’m pretty sure this happens to everyone who uses tablets and phones.
Ex. Let’s say I am running after a player and they’re walking I reach them and hit them and I stop sprinting and he runs away.
