Villagers already spawning with professiong and doesn't change it

When I try to spawn a villager with an egg, they already come with a profession, even tho doesn't have any work station around, and when I try to change it, by placing a working station in front of they, nothing happens.

(No I didn't made a trade before to attempt to change their profession)
