New PS4 update typically takes more than 10 - 15 minutes to start

We recently installed the latest update.  I thought the version was 2.0.0.  When we start the game, it usually takes more than 10 to 15 minutes to start.  It hangs on the Minecraft screen with the gray bar graph.
