Cooked fish will not stack

Today the new "update" was released on Xbox One and all consoles for Minecraft Bedrock. It was supposed to help and improve with bug fixes... And I know I'm not the only one experiencing issues. There's a bug that will not let me stack my 16 cod and 8 salmon (already cooked)that I collected before the update with the new fish i collected and cooked today. Also, and experienced minecrafters will agree this is a bug: I have mined around at Y=12 for hours and not found a single diamond. I even checked different chunks in different areas of my world... But now I have mined 4 emeralds.
