Villagers aren't restocking, not changing professions when they are cured or grown into an adult and animals are vanshing

Villagers are not restocking their trades even when they can get to their workstations leaving you soft locked. I can't change villagers profession when I got them cured from being a zombie as they already have a bar to say they've been traded with when they haven't and same goes with a villager that just got into mature phase and is already traded with leaving me having them as a profession I don't want and animals are just vanishing from your farms or that you have tied up.
