High ping and latency

Hello dear Mojang, I would like to know why with the latest version of Minecraft there is a big delay and poor optimization about the delay, it's high when I hit a mob or a player I have to spam clicks terribly because the delay goes away after 1-3 seconds the internet is powerful I tried playing on the server and in a single world there is a strong delay everywhere
