Cured zombie villagers are locked into professions

Upon healing a zombie villager i noticed that he has a profession and is locked and he’s been traded with already? When I opened the new version (1.21) it was fine for 6 or 7 villagers but now when I cure a zombie villager they are not unemployed.  They are locked into a profession and I can’t change it.  I play in creative and do not know if this happens in survival.  Also the prices are not brought down to 1. I have 1.21 experimental villager rebalancing off in my world.  Please help!
