Minecraft is using extream amounts of PC memory since the past few days

My graphics drivers are fully up-to-date as is my Windows 10 OS.

Here's my PC specs:

CPU: AMD Ryzen 5 3600 6-Core Processor, 3600 Mhz, 6 Core
RAM: 32.0 GB
GPU: NVIDIA GeForce RTX 2070 Super

The Issue

I noticed for the past few days Minecraft started using up all 32 GB's of PC memory. While monitoring the performance tab on Task Manager I noticed the memory usage did not start climbing until I loaded any map, even newly created maps. Then it would quickly climb to almost max memory and make the game and my PC so slow I could hardly do anything.

After going back to the main menu the memory stayed almost maxed out.
