Inventory UI gets laggy when the Crafting tab is open

At the start of my attached video you can see I'm struggling to quickly select the porkchops and overall manuver my cursor, when I close the crafting tab, I can more easily move around my inventory and select the items I want, then again when I open the crafting tab I'm getting a hard time moving my cursor, when you see me double click on a slot it's because I was expecting my cursor to move to another slot but it stayed in the same slot before selecting it.

This lag wasn't present when I played another world back in 1.18.

This lag gets very annoying when I'm trying to quickly craft something because sometimes I'll select a recipe I didn't mean to select and I'll craft items by mistake, also organizing my inventory gets tedious if I have the crafting tab open.

I can't recreate this in a new world, because even in my current world there have been a few instances where I've noticed the lag disappears but most of the time it's like in the video, even when I first started my world a few months ago, and I've noticed this lag even in parts of my world I haven't explored and have no buildings.
