Achievements disappearing from list on xbox 360

I'm playing bedrock on the 360 on the latest version and some of the achievements are simply vanishing from the list of ones you can earn.

 

I performed Artificial Selection (which WAS on my list on the achievements screen) and not only did it not pop, its disappeared from the list entirely.

A couple of days ago, I performed both Freight Station and Smelt Everything and those too, have simply disappeared.
