Horses, donkeys and mules use the old version of the textures

Summary:
In the latest version, horses, donkeys and mules began to use the old version of the textures (model). The problem does not affect 1.18.12.

Steps to reproduce:

1. Summon a horse, a donkey, and a mule.
2. Look at what the mobs look like.

Observed results:
Horses, donkeys and mules use the old texture (and model).

Expected results:
The new texture (and model) should be used.
