When using signs, trying to dye the writing the writing disappears. I will also add delayed chat messages when playing multiplayer (on realm)

So i'm playing Minecraft with some friends and whenever we use signs and try to color them, the writing disappears. We are also having issues with delayed chat messages. It is only 1-5 of us at a time on a ten-person realm (one of those people is the owner btw). Two people play on IOS, I go between Nintendo Switch and Xbox One, and the other two are Windows 10/11.
