Game not saving between modes

If I try to switch from survival to creative mode or vice versa, the game will often reopen to a previous point, like loading an older save file. I do make sure to properly save and exit to the main menu and I give the game time to load itself before I change between modes. The farthest it's skipped back is 10-15 minutes. I.E.- I built a bridge from a water temple to my base and it took over an hour. I switched to survival and a good bit of the most recent progress I'd made wasn't there.

 

I'm playing the Bedrock edition.
