Tropical fish picked up in a bucket lose their color when placed.

I've tested many of the tropical fish variants, and they all lose their color when picked up and placed from a bucket (ie. the Emperor Red Snapper when placed becomes a White Clayfish). Fish named with a name tag keep the name but lose their color and become "white" versions.
