Villagers randomly change trades even after I've traded

I am creating a villager trading hall and I will get the trade I want after ages of breaking and replacing the work block. Immediately trade with the villager to lock in the trade and move them into the desired location. When they are at the location I look at their trades and they have changed despite me previously trading with the villager.
