Un-enrolling from the beta version 1.16.210.55 not working

I recently installed Minecraft again after resetting my computer and it being deleted. When I reinstalled it, I was automatically enrolled into the beta version which apparently does not support the online servers so I looked on the website. I found the guide on how to un enrol from the beta and so I downloaded Xbox Insider Hub, selected un enrol, uninstalled Minecraft and reinstalled it to find that it loads up and shows me the non beta version for a few seconds, all for a few seconds before switching back to the screen that shows you information on the beta version and tells you to continue. Any help with how to un enrol properly I would really appreciate, thank you x
