Reinstalling minecraft results in no UI

Background

I was using 1.16.20056.0 BETA to make some maps, and wanted to downgrade to the most recently released version to host a demo. I unistalled Minecraft. I reinstalled it from the Microsoft Store. 

Issue

When I open Minecraft, everything seems normal at first. However, as soon as the game loads the menu has no UI. It flickers a few times when first loaded, but that's it. There is a strange collection of white pixels on the top left (see image). I can sometimes click buttons but they're in the wrong spot and I am unable to do anything in this invisible menu. 

Attempted fixes

I have tried reinstalling Minecraft multiple times. I have tried disabling developer mode, rebooting my pc, and reinstalling the game to no avail. I have tried reinstalling Minecraft and rebooting my pc to no avail. I have tried to replace com.mojang with a version I have backed up with no luck.
