Minecraft high CPU and laggy performance on i7 with RTX2060 32GB Ram

I'm running a decent PC, but I've noticed that in a largish world I'm seeing huge CPU spikes and my frame rate drops down to as low as 12FPS.  Occasionally response time is so bad that the keyboard stops responding for 30 seconds or so.
