In Bedrock launcher, it will state "Latest Release" regardless of which release is installed

In the Minecraft Launcher, under the Minecraft for Windows tab, there are options to launch either "Latest Release" or "Latest Preview". This does not take into account the actual versions of Minecraft installed, for example, Minecraft Windows 10 Edition v1.1 could be installed, and "Latest Release" will still be stated.
