Can't start Launcher after update on macOS

The Minecraft Launcher was updated and after that, I can't launch it anymore.
When I click on the grass icon, it bounces once (Mac animation), and nothing happens after that.

I tried re-installing it 3 times from the Minecraft website, and the problem persists.

It doesn't even appear in the Mac Activity Monitor.
