1.16.3 not showing up

So i was trying to join my minecraft server i play on and it said it had moved to 1.16.3 and i was like ok, i will just change my launcher to 1.16.3. I tried to change to 1.16.3 but it keeps saying 1.16.2 is the latest update. I play on a macbook air if that helps at all and I just don't understand why my launcher wont let me play on 1.16.3
