Iโ€™m pretty sure this is an intentional game mechanic. Just like in Minecraft bedrock edition the game continues even if you are paused or in your inventory.

Vito Torres, that shouldn't be, in Minecraft Java opening the menu pause the game in solo, even if it's not the case in Bedrock you can simply leave your world without loosing progression. In this case if you need to pause the game for any reason, while fighting, you will loose progression, because you will either die from mob or be forced to leave the game and restart all the dungeon again, I personally had to redo a Dungeon many time not because it was too hard but because I was forced by the game to loose my progression because I had to pause the game. That is my personal case but I'm pretty sure that I'm not the only one bothered by this "feature" (that maybe isn't one) that feel most like an annoying bug or an unfair feature than a real feature of the game.
It may not be a bug but because of it's unfairness it should be fixed
