Trim materials item tag is not deterministic in data generation
The code used to generate the trim materials item tag is not deterministic. As a result, each version of Minecraft will have a different order for the item tag. The relevant portion of the item tag data generator is as follows:

.forEach(entry -> this.getOrCreateTagBuilder(ItemTags.TRIM_MATERIALS).add(entry.value().ingredient().value()));
