Cannot replace food tags for animals

I changed the "armadillo_food.json" tag in a datapack in 1.20.5 and replaced the spider_eye with a structure_void but strangely the armadillos were still attracted to spider eyes and also the structure void even tho spider_eye is not even mentionned in the item tag.

 

It seems that all mobs are affected by this bug, you cannot override the vanilla food items.
