Crafters fill up left to right before adding to the same slot, making them inconsistent with Droppers and Dispensers.

With the recent fix of MC-265910, Mojang seems to care about making the Crafter in-line with the dropper and the dispenser, so why didn't they go all the way with it? Making things consistent will help people adjust more easily to this new block's inclusion into Minecraft 1.21
