Issue with downgraded signs

I was organizing chests by writing signs on them, this was in 1.20.1, and then I downgraded to 1.19.4, all the text on the signs were wiped, I tried right clicking on them, but nothing happened.
By the way, I just put 1.20.2 for the affected versions because I can't figure out how to put anything below 1.20.2, this really affects 1.19.4.
