Game won't load correctly after 21w08b

Minecraft won't load properly after snapshot 21w08b. Anything after that only loads the assets halfway. Trying to play the game in this state is almost impossible, as all the items and mobs glitch out. Uninstalling and reinstalling the program did not fix it.
