Entities freezing and lag spikes

Things in the world (such as redstone and entities) keep freezing consistantly after placeing down signs but also at random times as well.

When this lag happens, the text box for the signs doesn't show up until the spike is over. And things that update, like redstone and the mobs, dont update until the issue ends as seen in the video.

Im not sure what details to provide but i have included two videos to show the issue.
