After updating to 1.17: mobs, chests, item frames, beds and other non-full blocks are black color

After updating to 1.17: mobs, chests, item frames, beds and other non-full blocks are black color; all blocks in Creative inventory are black color. Certain items like torches in the inventory bar are black color.

Deleted .minecraft folder and re-created from launcher, but same problem.

Not using any resource packs.

(don't worry, my world save files were first copied to a non-minecraft location - so haven't lost anything).
