Minecraft 1.17 VERY glitchy, and items not properly loading

I haven't been on Minecraft for a bit now, but got onto Minecraft recently, and after updating my game all my worlds have this weird glitch that affects items in your inventory. Idk why I have this, but I assume it's related to the new update. I also added an link to a video below to show what I see. This has never happened to me before.
