thorns affect is applies when attacking a entity during death animation

when hitting an entity during its death animation thorns is still applied despite the entity not taking damage 

reproduce:
summon a guardian kill it and while its death animation is playing hit it you will see you take damage this works in singleplayer and multiplayer
