Floating islands generate endstone regardless of biome selected.

Title basically says it all. You can pick any biome and the islands will generate with endstone in place of the normal over world stone variants/ores. completely filling in any cave / mine shaft that may have spawned.

 

Island of endstone you get matches the same island you get in the end on the same seed.
