Destroyed netherrack and spawned Hoglin and seemingly unlimited netherrack

I was mining the netherrack above my head with an enchanted diamond pickaxe and a Hoglin spawned out of no where and started to attack. I killed it and went back to where I was mining and what seemed to be the blocks where the Hoglin spawned from were now spewing netherrack.
