Opening inventory on wild horse allows you to saddle it up

Riding an wild horse and opening the horse's inventory (E, not clicking) allows you to shift+click a saddle into the inventory before the horse bucks you.

EDIT:
Shift+clicking armor is also possible, but horse can still buck. Clearing the horse's inventory after saddling will allow the horse to buck you again.
