Rollbacks on servers

There is more rollbacks on 1.14.3 than the other versions.. I never had rollback when I was playing on my 1.12.2 server
For example : When I hit a mob, the mob doesn't move for a few seconds or when I break a block it takes sometimes a few seconds to be broken and that's a quite annoying ^^
