It's not possible to pause the game by opening the Game Menu anymore.

If you try to pause the game by pressing default Esc key, it will sometimes not pause corretly. It doesn't matter if you are in creative, spectator, survival, or even adventure mode; mobs will still make noises and move, the days in Minecraft will go on, etc. It's not different than opening your Inventory.
