Shulker box interactions doesn't appear in the Statistics like other interactions.

Interactions with furnaces, chests, trapped chests, enchanting tables, crafting tables, note blocks, cauldrons, cakes, jukeboxes, beacons, dispensers, hoppers, droppers and anvils are tracked by the Statistics, but interactions with shulker boxes doesn't appear.
