The bundled LWJGL version contains a bug that is fixed upstream

Minecraft uses an older version of LWJGL which crashes when the user has disabled one of his/her displays.
This bug is fixed in https://github.com/LWJGL/lwjgl/commit/1dbca8b6236768793cf3c52702625ece7c3c3992 , but Minecraft bundles an older version (more than a year old), which still contains this bug
