You need to download an old working version then update it.

It worked for me

Now I can finally play Minecraft

Do you have any resource packs in

%LocalAppData%\Packages\Microsoft.MinecraftUWP_8wekyb3d8bbwe\LocalState\games\com.mojang\resource_packs

? If so, does deleting them fix the issue?
